Butterhead And Mesclun Salad W/grilled Star Fruit (carambola) An

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • Servings: 4
  • 3 tablespoons champagne vinegar
  • 1 teaspoon minced garlic
  • 1/4 finely chopped mixed herbs such as thyme, tarragon, chives or 1/4 parsley
  • 1/3 cup olive oil
  • salt and pepper
  • 1 star fruit, cut crossways into 1/4 inch slices
  • 1/4 head butterhead lettuce, washed and leaves separated
  • 2 cups mixed greens, washed
  • 1/2 head radicchio, finely sliced
  • 16 fresh edible flowers (such as nasturtiums, chive blossoms or pansies)

Recipe

  • 1 combine the champagne vinegar, herbs, garlic and salt and pepper in a mixing bowl and allow to steep 15 minutes.
  • 2 slowly whisk in the oil until completely emulsified.
  • 3 prepare the grill or broiler for the star fruit. lightly grill or broil the fruit for about 3 minutes on each side.
  • 4 place the lettuce leaves on serving plates. mound the mesclun greens on top.
  • 5 garnish with the radicchio.
  • 6 arrange the edible flowers and star fruit on the lettuce leaves around the edge of the plate.
  • 7 drizzle the dressing over the salad.
