Chicken With Capers

Ingredients
- Servings: 4
- 1/3 cup olive oil
- 4 skinless chicken breasts, pounded to 1/4 inch
- 1 1/2 teaspoons season salt
- 1 1/2 teaspoons fresh coarse ground black pepper
- 1/3 lb mushroom, sliced
- 3 tablespoons capers
- 1/2 cup wine
Recipe
- 1 sprinkle chicken with season salt and pepper.
- 2 heat olive oil in a frying pan.
- 3 sauté chicken on both sides until golden brown.
- 4 remove to warm serving platter.
- 5 in the same pan sauté mushrooms, 1 or 2 minutes.
- 6 add wine, cook for 2 minutes.
- 7 add capers, just to heat.
- 8 pour mixture over chicken.
