Cheese Scones

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 2/3 cups self raising flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons unsalted butter
  • 4 ounces well aged cheddar cheese, coarsely grated
  • 7 tablespoons milk, for brushing top
  • 1 egg

Recipe

  • 1 place rack in upper part of oven.
  • 2 preheat oven to 425°f.
  • 3 butter and flour baking tray.
  • 4 in a bowl, sift together the flour, salt and cayenne pepper.
  • 5 using your fingers, lightly rub in butter until mixture resembles coarse crumbs.
  • 6 stir in cheese and make a well in the center; set aside.
  • 7 in a new small bowl, whisk together the 7 tablespoons of milk and egg.
  • 8 pour the milk/egg mixture into the flour mixture well. mix quick and light to make a dough. if dough seems too dry, add a few drops of milk as needed.
  • 9 on lightly floured board, roll out dough to be about 1 inch thick; cut into squares.
  • 10 place on prepared pan.
  • 11 brush tops with the 2 tablespoons of milk.
  • 12 bake in the upper part of the oven until golden and crisp, about 12-15 minutes.
  • 13 serve warm of at room temperature.
