Ingredients

- 1 2/3 cups self raising flour
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 2 tablespoons unsalted butter
- 4 ounces well aged cheddar cheese, coarsely grated
- 7 tablespoons milk, for brushing top
- 1 egg
Recipe
- 1 place rack in upper part of oven.
- 2 preheat oven to 425°f.
- 3 butter and flour baking tray.
- 4 in a bowl, sift together the flour, salt and cayenne pepper.
- 5 using your fingers, lightly rub in butter until mixture resembles coarse crumbs.
- 6 stir in cheese and make a well in the center; set aside.
- 7 in a new small bowl, whisk together the 7 tablespoons of milk and egg.
- 8 pour the milk/egg mixture into the flour mixture well. mix quick and light to make a dough. if dough seems too dry, add a few drops of milk as needed.
- 9 on lightly floured board, roll out dough to be about 1 inch thick; cut into squares.
- 10 place on prepared pan.
- 11 brush tops with the 2 tablespoons of milk.
- 12 bake in the upper part of the oven until golden and crisp, about 12-15 minutes.
- 13 serve warm of at room temperature.
