Cheese Quesadillas With Sweet Vidalia Onion

Ingredients

  • Servings: 18
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 vidalia onion, sliced
  • 6 small flour tortillas
  • 1 cup shredded cheddar cheese, divided
  • 1/3 cup finely diced red pepper
  • 24 cilantro leaves

Recipe

  • 1 in large skillet, melt butter over medium heat and saute vidalia onion until softened.
  • 2 lay tortillas on work surface and sprinkle half of cheese on half of each tortilla.
  • 3 divide vidalia onions evenly among tortillas, placing over the cheese.
  • 4 top with red pepper and cilantro.
  • 5 sprinkle remaining cheese over cilantro leaves.
  • 6 fold plain half of tortilla over filling and press down gently.
  • 7 heat large, lightly greased nonstick or cast-iron skillet over medium-high heat.
  • 8 place folded quesadillas in hot pan; cook until golden brown, turn and cook other side.
  • 9 remove from pan and cut each into 3 triangles.
  • 10 serve warm.
