Cheese Quesadillas With Sweet Vidalia Onion

Ingredients

- 1 tablespoon butter or 1 tablespoon margarine
- 1 vidalia onion, sliced
- 6 small flour tortillas
- 1 cup shredded cheddar cheese, divided
- 1/3 cup finely diced red pepper
- 24 cilantro leaves
Recipe
- 1 in large skillet, melt butter over medium heat and saute vidalia onion until softened.
- 2 lay tortillas on work surface and sprinkle half of cheese on half of each tortilla.
- 3 divide vidalia onions evenly among tortillas, placing over the cheese.
- 4 top with red pepper and cilantro.
- 5 sprinkle remaining cheese over cilantro leaves.
- 6 fold plain half of tortilla over filling and press down gently.
- 7 heat large, lightly greased nonstick or cast-iron skillet over medium-high heat.
- 8 place folded quesadillas in hot pan; cook until golden brown, turn and cook other side.
- 9 remove from pan and cut each into 3 triangles.
- 10 serve warm.
