Banana Corn Muffins

Ingredients
- 1 mashed banana
- 1/2 cup milk (2% or skim)
- 1 (8 1/2 ounce) package corn muffin mix (such as jiffy)
- 1/2 teaspoon vanilla extract
- cooking spray
- 1/4 cup semi-sweet chocolate chips
Recipe
- 1 preheat oven to 350°.
- 2 combine banana, milk, mix, vanilla extract, and chocolate chips (if desired) in a medium bowl. stir just until moist.
- 3 spoon batter evenly into 6 muffin cups coated with cooking spray ). bake at 350° for 22 minutes or until a wooden pick inserted in center comes out clean.
- 4 cool in pan 10 minutes.
