Banana Corn Muffins

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup all-purpose flour
  • 3/4 cup cornmeal
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt (optional)
  • 3/4 cup mashed banana
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 egg, slightly beaten

Recipe

  • 1 heat oven to 425. line 12 muffins cups with paper baking cups or grease lightly.
  • 2 in medium bowl, combine flour, corn meal, sugar, baking powder and salt. in small bowl, combine banana, milk, oil and egg. add to flour mixture, stirring just until moistened.
  • 3 fill muffin cups 3/4 full.
  • 4 bake 15 to 18 minute or until golden brown. remove from pan. serve warm.
