Banana Corn Muffins

Ingredients
- 1 cup all-purpose flour
- 3/4 cup cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt (optional)
- 3/4 cup mashed banana
- 1/2 cup milk
- 1/2 cup vegetable oil
- 1 egg, slightly beaten
Recipe
- 1 heat oven to 425. line 12 muffins cups with paper baking cups or grease lightly.
- 2 in medium bowl, combine flour, corn meal, sugar, baking powder and salt. in small bowl, combine banana, milk, oil and egg. add to flour mixture, stirring just until moistened.
- 3 fill muffin cups 3/4 full.
- 4 bake 15 to 18 minute or until golden brown. remove from pan. serve warm.
