Black Beans And Rice With Cheese

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 cup chopped onion (1 medium onion)
  • 1 cup chopped red bell pepper (1 large)
  • 6 garlic cloves, minced
  • 3/4 cup water
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground red pepper
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 2 cups hot cooked brown rice
  • 1/2 cup shredded reduced-fat cheddar cheese

Recipe

  • 1 prepare brown rice according to package directions.
  • 2 while brown rice is cooking heat oil in a medium saucepan over medium heat.
  • 3 add onion and bell pepper; cook 5 minutes or until tender, stirring occasionally.
