Asparagus Pie

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 baked pie shell
  • 4 cups cooked asparagus
  • 3 hardboiled egg, diced coarse
  • 1 1/2 cups shredded medium sharp cheddar
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 2 chicken bouillon cubes
  • 1 tablespoon chives

Recipe

  • 1 set oven to 400°f make sauce by melting 1 tablespoon butter; add flour and stir 1 to 2 minutes. add milk; stir and bring to a boil. when it becomes thick, add bouillon, chives and 1/2 cup cheddar cheese.
  • 2 once the cheese melts, add asparagus and eggs. season to taste with salt and pepper. pour into baked pie shell. top with remaining cheese. bake at 400°f for 10 to 15 minutes.
