Curried Lamb Chops (barbados)

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1/3 cup raisins
  • 1/2 teaspoon ground cumin
  • salt and pepper (to taste )
  • 1 1/4 cups chicken broth
  • 4 tablespoons water
  • 1 1/2 teaspoons curry powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon chili powder
  • 8 small lamb chops (very thin)

Recipe

  • 1 toast rice in 1 tablespoon oil for 2-3 minutes.
  • 2 stir in raisins, cumin, salt and pepper. cook for 1 minute.
  • 3 add broth and water. simmer covered until the liquids are absorbed by the rice, about 20 minutes.
  • 4 meanwhile, combine curry powder, cinnamon and chili powder and rub into chops.
  • 5 divide remaining oil into 2 skillets and saute 4 chops in each skillet until done, about 3 minutes per side. serve over rice.
