Curried Lamb Chops (barbados)

Ingredients
- Servings: 4
- 1 cup long-grain rice
- 2 tablespoons olive oil
- 1/3 cup raisins
- 1/2 teaspoon ground cumin
- salt and pepper (to taste )
- 1 1/4 cups chicken broth
- 4 tablespoons water
- 1 1/2 teaspoons curry powder
- 1/4 teaspoon cinnamon
- 1/4 teaspoon chili powder
- 8 small lamb chops (very thin)
Recipe
- 1 toast rice in 1 tablespoon oil for 2-3 minutes.
- 2 stir in raisins, cumin, salt and pepper. cook for 1 minute.
- 3 add broth and water. simmer covered until the liquids are absorbed by the rice, about 20 minutes.
- 4 meanwhile, combine curry powder, cinnamon and chili powder and rub into chops.
- 5 divide remaining oil into 2 skillets and saute 4 chops in each skillet until done, about 3 minutes per side. serve over rice.
