Banana Muffins With Chocolate And Ginger

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 4 medium mashed ripe bananas
  • 2 tablespoons vegetable oil
  • 1/4 cup plain yogurt
  • 1/3 cup brown sugar, packed
  • 1 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 cup crystallized ginger, chopped fine
  • 1/2 cup dark chocolate, chopped into small chunks

Recipe

  • 1 sift flour with baking soda, powder and salt. set aside.
  • 2 mash bananas in a large mixing bowl. add oil, yogurt, egg, and vanilla. mix. add brown sugar and blend well.
  • 3 stir in dry ingredients until well mixed but don’t over-beat. add chocolate and crystallized ginger. spoon into oiled muffin tins.
  • 4 bake at 350’ for 15-20 minutes or until muffins spring back when touched in the centre.
