Banana Muffins With Chocolate And Ginger

Ingredients
- 4 medium mashed ripe bananas
- 2 tablespoons vegetable oil
- 1/4 cup plain yogurt
- 1/3 cup brown sugar, packed
- 1 teaspoon salt
- 1 egg
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 cup crystallized ginger, chopped fine
- 1/2 cup dark chocolate, chopped into small chunks
Recipe
- 1 sift flour with baking soda, powder and salt. set aside.
- 2 mash bananas in a large mixing bowl. add oil, yogurt, egg, and vanilla. mix. add brown sugar and blend well.
- 3 stir in dry ingredients until well mixed but don’t over-beat. add chocolate and crystallized ginger. spoon into oiled muffin tins.
- 4 bake at 350’ for 15-20 minutes or until muffins spring back when touched in the centre.
