Curried Squash Soup

Ingredients

  • Servings: 2
  • 1 (10 ounce) package frozen pureed winter squash
  • 1/2 cup light coconut milk
  • 1/2 cup water
  • 1 (6 ounce) bag baby spinach
  • 2 teaspoons brown sugar
  • 1 teaspoon thai red curry paste
  • 2 teaspoons lime juice

Recipe

  • 1 in medium saucepan, combine squash, coconut milk, water, spinach, brown sugar and curry paste. heat, stirring occasionally, until hot. stir in lime juice.
