Baked Breakfast Burritos

Ingredients

- 8 slices bacon
- 1 (4 ounce) can mushroom pieces, drained
- 6 green onions, diced
- 1/3 cup green pepper, diced
- 1 garlic clove, minced
- 8 eggs
- 1/4 cup sour cream
- 3/4 cup cheddar cheese, shredded
- 3 tablespoons taco sauce
- 1 tablespoon butter
- 4 large flour tortillas
Recipe
- 1 in a skillet , cook bacon until crisp, remove to paper towel to drain. reserve 1 tablespoon bacon drippings.
- 2 in a bowl, beat eggs and sour cream. stir in 1/4 cup cheese and taco sauce.
- 3 in a skillet, melt butter and egg mixture. cook over low heat, stirring occasionally until eggs set. remove from heat.
- 4 crumble the bacon, add to eggs with mushroom mixture.
- 5 spoon down the center of tortillas, roll up.
- 6 place seam down in buttered casserole dish.
- 7 sprinkle with remaining cheese.
- 8 bake at 350 for 5 minutes.
- 9 serve with sour cream and taco sauce if desired.
