Asparagus Chicken & Almonds

Total Time: 24 mins Preparation Time: 15 mins Cook Time: 9 mins

Ingredients

  • Servings: 4
  • 1 lb boneless chicken breast, cut in thin strips
  • 1 tablespoon oil
  • 1 teaspoon ginger
  • 1/4 cup blanched almond
  • 2 cups frozen stir fry vegetables, thawed
  • 1/2 cup chicken stock
  • 1 tablespoon sherry wine
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 3/4 lb canned asparagus, drained

Recipe

  • 1 heat oil in a heavy nonstick skillet or wok over medium high heat.
  • 2 sauté chicken 3 to 5 minutes until golden.
  • 3 stir in ginger, almonds and vegetables and stir fry another 3 to 4 minutes.
  • 4 combine stock, sherry, soy sauce and cornstarch in a bowl.
  • 5 stir into skillet until bubbling.
  • 6 fold in asparagus, reheat and serve immediately.
