Chicken With Sun-dried Tomato Sauce

Ingredients

  • Servings: 6
  • 6 thin boneless chicken breasts
  • salt & pepper
  • 1 tablespoon olive oil
  • 1/2 cup low sodium chicken broth
  • 1 cup reduced-fat sour cream
  • 1 teaspoon minced garlic
  • 1 cup sun-dried tomato, coarsely choppedlemon zest
  • 1 lemon, freshly squeezed
  • 3/4 cup shredded mozzarella cheese

Recipe

  • 1 pour olive oil in large sauce pan and heat over medium-high heat. salt & pepper the chicken breasts on both sides, to taste. place them in skillet, cooking on each side until slightly browned, approximately 3 minutes per side. remove chicken to dish.
  • 2 deglaze pan with chicken broth. add sour cream, garlic, sundried tomatoes, lemon zest and lemon juice. mix well and bring to just under a boil. add chicken back to pan, spooning sauce over the breasts. cover, reducing heat to low, and simmer approximately 15 minutes, or until chicken is fully cooked. when ready to serve, sprinkle with shredded mozzarella cheese.
  • 3 serve with a simple rice dish and tossed salad.
