Chicken With Provencal Sauce

Ingredients

  • Servings: 4
  • 4 (6 ounce) boneless skinless chicken breast halves
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 1/2 tablespoons olive oil
  • 1 -2 garlic clove, minced
  • 1 cup fat-free chicken broth
  • 1 1/2 teaspoons dried herbes de provence
  • 1 teaspoon butter
  • 1 teaspoon fresh lemon juice
  • fresh thyme sprig

Recipe

  • 1 place each chicken breast between 2 sheets of plastic wrap; pound to 1/2-inch thickness using a meat mallet or rolling pin.
  • 2 sprinkle chicken with salt and pepper.
