Blackberry Mojito Refrigerator Jam

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 1 (7 ounce) package frozen blackberries
  • 3/4 cup sugar
  • 1 cup water, plus
  • 1/4 cup water, for cornstarch mixture
  • 4 sprigs fresh mint
  • 1/2 lime, juice of
  • 3 tablespoons cornstarch

Recipe

  • 1 in a heavy bottom sauce pan, combine the the blackberries, lime juice, sprigs of mint, sugar and 1 cup of water.
  • 2 mix the 1/4 cup of water with cornstarch and set aside.
  • 3 cook over medium heat, stirring frequently until it boils.
  • 4 when the blackberries begin to pop, remove the mint sprigs. stir the cornstarch mixture vigorously and add to the blackberry mixture.
  • 5 stir and continue to cook until the jam thickens to the consistency of your preference. cool and pour into a jar.
