Ingredients

- 1 tablespoon olive oil
- 1 clove garlic, finely chopped
- 1 red bell pepper, seeded and sliced lengthwise
- 8 ounces mushrooms, sliced
- 1 (15 ounce) can red kidney beans (undrained)
- 1/8 teaspoon salt
Recipe
- 1 in a 12" pan, saute garlic in oil for 1 minute.
- 2 add mushrooms and saute until golden brown.
- 3 remove mushrooms from pan, add bell pepper and saute until cooked but still firm.
- 4 combine mushrooms, salt, and kidney beans with bell pepper in pan.
- 5 bring mixture to a boil, simmer briefly, then serve.
