Ingredients

- 1 1/2 lbs chicken breasts, boneless, skinless
- 1/2 cup lemon juice
- 1/4 cup soy sauce
- 1/4 cup dijon mustard
- 2 teaspoons vegetable oil
- 1/4 teaspoon cayenne pepper
- 1 cup long-grain rice, uncooked
Recipe
- 1 cut chicken breasts into 1-inch cubes. mix lemon juice, soy sauce, mustard, oil, and cayenne pepper. put marinade and chicken in a 1-gallon bag and freeze.
- 2 to prepare, thaw chicken and remove from marinade. bring marinade to a boil in a small saucepan.
- 3 spray broiler pan with nonstick spray and place cubed chicken on the pan, with pieces about 1 inch apart.
- 4 broil 4 to 5 inches from heat for about 7 minutes, brushing with marinade once.
- 5 turn cubed chicken and broil another 4 minutes.
- 6 while chicken is cooking, prepare rice according to package directions.
- 7 suggested sides: lentil salad.
