Bacon, Mushroom And Swiss Croissant

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 tablespoon butter
  • 6 large eggs, lightly beaten
  • 8 ounces sliced mushrooms
  • 6 croissants, split (5-inch croissants)
  • 4 ounces baby swiss cheese, cut into thin slices
  • 6 slices bacon, cooked
  • 2 tablespoons chopped fresh chives

Recipe

  • 1 preheat broiler with rack set 3-5 inches from heat.
  • 2 in a large nonstick skillet, melt butter over medium heat.
  • 3 saute eggs and mushrooms for 3 minutes or until eggs are scrambled.
  • 4 place croissants on a work surface.
  • 5 top each croissant half equally with egg mixture, swiss cheese, and bacon.
  • 6 place open-faced croissant halves on a broiler pan and broil for 2 minutes or until croissant is slightly toasted and cheese is melted.
  • 7 garnish with chives.
