Bacon, Mushroom And Swiss Croissant

Ingredients
- Servings: 6
- 1 tablespoon butter
- 6 large eggs, lightly beaten
- 8 ounces sliced mushrooms
- 6 croissants, split (5-inch croissants)
- 4 ounces baby swiss cheese, cut into thin slices
- 6 slices bacon, cooked
- 2 tablespoons chopped fresh chives
Recipe
- 1 preheat broiler with rack set 3-5 inches from heat.
- 2 in a large nonstick skillet, melt butter over medium heat.
- 3 saute eggs and mushrooms for 3 minutes or until eggs are scrambled.
- 4 place croissants on a work surface.
- 5 top each croissant half equally with egg mixture, swiss cheese, and bacon.
- 6 place open-faced croissant halves on a broiler pan and broil for 2 minutes or until croissant is slightly toasted and cheese is melted.
- 7 garnish with chives.
