1960 Tomato Gravy

Ingredients
- 3 tablespoons bacon grease
- 1 onion, chopped
- 2 tablespoons flour
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 1/2 cups canned tomatoes
- 1 teaspoon sugar
- 1 small bay leaf
- celery leaves or celery salt
Recipe
- 1 heat bacon grease.
- 2 add onion and fry until golden.
- 3 add flour, salt and pepper and cook until light brown (like a roux), stirring constantly.
- 4 add canned tomatoes, sugar, bay leaf and celery leaves or celery salt.
- 5 cook for another five minutes.
- 6 remove bay leaf.
- 7 rub through a strainer or serve without straining for chunkier sauce.
- 8 adjust seasonings to taste.
