1960 Tomato Gravy

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 3 tablespoons bacon grease
  • 1 onion, chopped
  • 2 tablespoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 1/2 cups canned tomatoes
  • 1 teaspoon sugar
  • 1 small bay leaf
  • celery leaves or celery salt

Recipe

  • 1 heat bacon grease.
  • 2 add onion and fry until golden.
  • 3 add flour, salt and pepper and cook until light brown (like a roux), stirring constantly.
  • 4 add canned tomatoes, sugar, bay leaf and celery leaves or celery salt.
  • 5 cook for another five minutes.
  • 6 remove bay leaf.
  • 7 rub through a strainer or serve without straining for chunkier sauce.
  • 8 adjust seasonings to taste.
