Atkins Southwestern Omelet

Ingredients
- 8 large eggs
- 1/4 cup water
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
- 4 teaspoons unsalted butter
- 4 ounces grated cheddar cheese (1 cup)
- 3/4 cup chopped bell pepper
- 1/2 cup chopped yellow onion
- 3/4 cup diced ham or 3/4 cup bacon
Recipe
- 1 heat 1 tablespoon olive oil in a large skillet over medium-high heat.
- 2 add 3/4 cup chopped red bell pepper and 1/2 cup chopped yellow onion; cook until vegetables are soft, about 5 minutes.
- 3 stir in 3/4 cup diced ham; cook until all ingredients turn light golden, about 3 minutes.
- 4 use 1/4 of this filling for each omelet, preparing recipe according to instructions.
- 5 whisk eggs, water, salt and pepper in a medium bowl.
