Atkins Southwestern Omelet

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 8 large eggs
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 teaspoons unsalted butter
  • 4 ounces grated cheddar cheese (1 cup)
  • 3/4 cup chopped bell pepper
  • 1/2 cup chopped yellow onion
  • 3/4 cup diced ham or 3/4 cup bacon

Recipe

  • 1 heat 1 tablespoon olive oil in a large skillet over medium-high heat.
  • 2 add 3/4 cup chopped red bell pepper and 1/2 cup chopped yellow onion; cook until vegetables are soft, about 5 minutes.
  • 3 stir in 3/4 cup diced ham; cook until all ingredients turn light golden, about 3 minutes.
