Corn & Zucchini Medley

Ingredients

- 3/4 lb ground beef
- 1 (10 ounce) package frozen corn, thawed
- 2 small zucchini, chopped (about 1/2 lb)
- 1 large tomato, chopped
- 1/2 cup onion, chopped
- 1 tablespoon fresh basil, chopped (or 1 tsp dried)
- 1 1/2 teaspoons fresh thyme, chopped (or 1/2 tsp dried)

- pepper
Recipe
- 1 brown beef 6 to 8 minutes in large skillet over medium-high heat, stirring to break up meat.
- 2 drain fat.
- 3 reduce heat to medium-low.
- 4 stir in corn, zucchini, tomato, onion, basil and thyme.
- 5 cover; cook 10 minutes or until zucchini is tender.
- 6 season with salt and pepper to taste.
