Chickpea & Bean Salad

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 2 cups vinegar
  • 2 cups sugar
  • 1/2 teaspoon fine black pepper
  • 1 teaspoon canola oil
  • 1 (15 1/2 ounce) can red kidney beans (drained)
  • 1 (14 1/2 ounce) can cut green beans (drained)
  • 1 (14 1/2 ounce) can yellow wax beans (drained)
  • 1 (15 ounce) can chickpeas (drained)
  • 1 (16 ounce) package frozen lima beans, cooked & drained
  • 1 cup diced celery
  • 1 cup sweet onion, slices

Recipe

  • 1 combine sugar, vinegar, oil and pepper.
  • 2 bring to boil and boil 3 minutes.
  • 3 add all other ingredients except onion slices and celery; bring back to boil.
  • 4 remove from heat add onions and celery; stir.
  • 5 refrigerate at least 2 hours or overnight.
  • 6 when ready to serve, drain and serve.
