Chicken Muffin Sandwiches

Ingredients

- 4 slices bacon, cut in half crosswise
- 1 1/2 cups sliced cooked chicken or 1 1/2 cups turkey breast
- 2 english muffins, split,toasted,and buttered
- 4 slices mild red onions
- 1 large tomato, peeled and cut into 4 thick slices
- 1/2 cup shredded cheddar cheese
Recipe
- 1 in a wide frying pan, partially cook bacon over medium heat to remove most of fat, bacon should still be limp.
- 2 lift out and drain on paper towels.
- 3 arrange chicken over muffin halves.
- 4 top each with an onion slice and a tomato slice, then sprinkle evenly with cheese.
- 5 arrange 2 bacon pieces on top of each muffin half.
- 6 place muffins in a rimmed baking pan.
- 7 broil about 6 inches below heat until cheese is bubbly and bacon is crisp, 3-5 minutes.
- 8 serve sandwiches open-faced; eat with a knife and fork.
