Cranberry Harvest Salad

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 (1 lb) can jellied cranberry sauce
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons cold water
  • 2 tablespoons lemon juice
  • 7 ounces ginger ale
  • 3/4 cup diced unpeeled apple
  • 3/4 cup diced celery
  • 1/2 cup chopped nuts

Recipe

  • 1 crush cranberry sauce with a fork.
  • 2 soften gelatin in cold water and lemon juice.
  • 3 cook over low heat, stirring constantly, until gelatin is dissolved.
  • 4 stir into cranberry sauce; cool slightly.
  • 5 add ginger ale; blend well.
  • 6 chill until mixture begins to thicken.
  • 7 fold in apple, celery and nuts.
  • 8 turn into 6 individual molds or 1 (1 quart) mold.
  • 9 chill until firm.
