Chicken Rosemary

Ingredients

- 1/3 cup sweet wine, i prefer sauterne
- 1 teaspoon dried rosemary, crushed
- 3 tablespoons vegetable oil
- 2 cups sliced fresh mushrooms
- salt and pepper
- 4 boneless skinless chicken breast halves
Recipe
- 1 in small bowl, combine wine and rosemary.
- 2 let stand at room temperture for 2 hours.
- 3 heat oil in lg skillet.
- 4 saute mushrooms until lightly browned; remove from skillet.
- 5 salt and pepper the chicken.
- 6 cook chicken until browned on both sides; add a little more oil if necessary.
- 7 return mushrooms to skillet.
- 8 add wine and rosemary mixture.
- 9 cook and stir for 2 minutes.
- 10 cover and simmer for 10 minutes.
