Bbq Chicken Kabobs

Ingredients
- Servings: 4
- 16 ounces barbecue sauce
- 1/4 cup bourbon whiskey
- 2 tablespoons apple cider vinegar
- 4 -5 lbs chicken (boneless skinless breasts, cut into 1㢠x1㢠pieces)
- 2 teaspoons salt
- 1 teaspoon pepper
- 1/4 cup sweet paprika
- 3 tablespoons dark brown sugar
- 1 tablespoon smoked paprika
- 6 slices bacon, chopped
- 8 -10 wooden skewers (soaked in water for an hour)
Recipe
- 1 in a bowl combine bbq sauce, vinegar and whiskey. whisk to combine. set aside and allow flavors to cme together.
- 2 add bacon to the bowl of a food processor and blend until bacon becomes a paste.
- 3 add salt, pepper, paprikas, and sugar. pulse until well combined.
- 4 pat chicken with a paper towel to dry.
- 5 add bacon paste mixture to chicken; mix with hands until chicken is completely coated.
- 6 place chicken on skewers.
- 7 place on preheated grill.
- 8 cook on each side for 2-3 minutes.
- 9 brush cooked surface with barbecue sauce and cook each side (coated in sauce) for 1 additional minute.
- 10 remove kabobs from grill.
- 11 pour remaining barbeque sauce into a small saucepan and bring to a boil. pour into a serving container and serve barbecue sauce along side kabobs.
