Coconut Cornmeal Pancakes

Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon sugar
- 1 egg, lightly beaten
- 3/4 cup milk
- 3/4 cup water
- 1/2-1 teaspoon coconut extract
- 1 tablespoon melted butter (or substitute virgin coconut oil)
- 1 cup grated coconut
Recipe
- 1 sift the dry ingredients together in a large bowl.
- 2 whisk the egg with the milk and water in another bowl.
- 3 pour the egg mixture in with the dry & stir until well blended.
- 4 next add the melted butter & coconut extract, stir in the coconut.
- 5 cook on a hot griddle as you would normal pancakes.
- 6 serve with honey, syrup, or sprinkle with powdered sugar.
