Coconut Cornmeal Pancakes

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1 egg, lightly beaten
  • 3/4 cup milk
  • 3/4 cup water
  • 1/2-1 teaspoon coconut extract
  • 1 tablespoon melted butter (or substitute virgin coconut oil)
  • 1 cup grated coconut

Recipe

  • 1 sift the dry ingredients together in a large bowl.
  • 2 whisk the egg with the milk and water in another bowl.
  • 3 pour the egg mixture in with the dry & stir until well blended.
  • 4 next add the melted butter & coconut extract, stir in the coconut.
  • 5 cook on a hot griddle as you would normal pancakes.
  • 6 serve with honey, syrup, or sprinkle with powdered sugar.
