Bharwa Baigan (stuffed Brinjal)

Ingredients
- Servings: 4
- 8 -10 brinjals, small baby size
- 4 onions
- 1 teaspoon chili powder
- 1/2 teaspoon garam masala powder
- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1/4 teaspoon turmeric powder
- 2 tablespoons jaggery, crushed
- 1/2 teaspoon mango powder
- salt
Recipe
- 1 remove the stalk from the brinjals and wash them.
- 2 holding the brinjal upwards, give it a cut looking like a"+" (plus) just upto the base leaving 1 cm down uncut.
- 3 slice the onions and fry them till brown.
- 4 remove on a kitchen towel.
- 5 when the onions get cooled, crush them.
- 6 in a bowl put the onion, red chili powder, garam masala powder, coriander powder, cumin powder, jagery, mango powder, turmeric powder and salt.
- 7 mix well.
- 8 stuff this mixture into the brinjals.
- 9 in a big pan heat approx.3 tbsp oil.
- 10 lay all the brinjals into this.
- 11 cover and cook on low flame.
- 12 turn the brinjals on other side after 5 mins.
- 13 cook till brinjals become soft and golden on both sides.
