Country-style Scrambled Eggs

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 slices bacon, diced
  • 2 cups red potatoes, diced
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 8 eggs
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup cheddar cheese, shredded

Recipe

  • 1 in a large skillet, cook bacon over medium heat until crisp. using a slotted spoon, remove to paper towels to drain.
  • 2 cook and stir potatoes in drippings over medium heat for 12 minutes or until tender.
  • 3 add onion and green pepper.
  • 4 cook and stir for 3 or 4 minutes or until crisp-tender; drain.
  • 5 stir in the reserved bacon.
  • 6 in a large bowl, whisk the eggs, milk, salt and pepper; add to skillet.
  • 7 cook and stir until eggs are completely set.
  • 8 sprinkle with cheese and let stand until cheese has melted.
