Country-style Scrambled Eggs

Ingredients

- 8 slices bacon, diced
- 2 cups red potatoes, diced
- 1/2 cup onion, chopped
- 1/2 cup green pepper, chopped
- 8 eggs
- 1/4 cup milk
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup cheddar cheese, shredded
Recipe
- 1 in a large skillet, cook bacon over medium heat until crisp. using a slotted spoon, remove to paper towels to drain.
- 2 cook and stir potatoes in drippings over medium heat for 12 minutes or until tender.
- 3 add onion and green pepper.
- 4 cook and stir for 3 or 4 minutes or until crisp-tender; drain.
- 5 stir in the reserved bacon.
- 6 in a large bowl, whisk the eggs, milk, salt and pepper; add to skillet.
- 7 cook and stir until eggs are completely set.
- 8 sprinkle with cheese and let stand until cheese has melted.
