Chicken Amandine

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil, separated
  • 1/3 cup sliced almonds
  • 2 tablespoons lemon juice

Recipe

  • 1 mix flour, salt and pepper.
  • 2 coat chicken breasts with this.
  • 3 in a skillet over medium high heat in 1 tablespoon hot olive oil, cook chicken breats until brown and fork tender, about 10 minutes.
  • 4 remove chicken to a platter.
  • 5 in same skillet over medium heat, in 1 more tablespoon hot olive oil, cook almonds until lightly browned.
  • 6 stir in lemon juice.
  • 7 spoon sauce over chicken.
