Brown Sugar Glazed Carrots

Ingredients

  • Servings: 6
  • 1 lb medium carrot, peeled
  • 3/4 teaspoon salt, divided
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1/2 cup minced onion
  • 1 1/2 tablespoons dark brown sugar or 1 1/2 tablespoons light brown sugar
  • 2/3 cup apple juice
  • 1/4 teaspoon pepper

Recipe

  • 1 cut carrots diagonally into 1/4 inch thick slices.
  • 2 cook in boiling water to cover with 1/2 teaspoons salt for 5 minutes or until crisp-tender. drain and rinse with cold water. pat dry with paper towels.
  • 3 melt butter in a large skillet over low heat; add onion and cook, stirring constantly 5 minutes.
  • 4 add apple juice and brown sugar; cook, stirring occasionally, 10 minutes.
  • 5 stir in carrots, remaining 1/4 teaspoon salt and pepper.
