Carrots With Goronzola Cheese

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 2 1/2 lbs carrots
  • 1/4 cup butter
  • 4 ounces gorgonzola, crumbled
  • 1/2 teaspoon salt
  • pepper

Recipe

  • 1 using a food processor and the slicing blade, slice carrots.
  • 2 using a steamer, put water in bottom of steamer and bring water to a boil.
  • 3 add carrots to steamer rack, cover and cook until crisp-tender (***carrots can be prepared 2 days ahead, covered and refrigerated***).
  • 4 in a skillet, melt butter over low heat.
  • 5 add cheese and cook until cheese melts, stirring constantly.
  • 6 stir in carrots, salt and pepper, cooking until heated through, stirring frequently.
