Carrots With Goronzola Cheese

Ingredients

- 2 1/2 lbs carrots
- 1/4 cup butter
- 4 ounces gorgonzola, crumbled
- 1/2 teaspoon salt
- pepper
Recipe
- 1 using a food processor and the slicing blade, slice carrots.
- 2 using a steamer, put water in bottom of steamer and bring water to a boil.
- 3 add carrots to steamer rack, cover and cook until crisp-tender (***carrots can be prepared 2 days ahead, covered and refrigerated***).
- 4 in a skillet, melt butter over low heat.
- 5 add cheese and cook until cheese melts, stirring constantly.
- 6 stir in carrots, salt and pepper, cooking until heated through, stirring frequently.
