Butter Bean And Mustard Mash

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 400 g butter beans, drained and rinsed
  • 300 ml vegetable stock
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 place the beans in a heavy pan and add the stock.
  • 2 bring to boil and simmer for 20 minutes.
  • 3 drain and reserve the stock.
  • 4 mash the beans with the mustard and oil.
  • 5 stir in the parsley.
  • 6 if the mash is too thick thin with some of the stock or more olive oil.
