Cinnamon-apple Lamb Chops Recipe

Ingredients

  • Servings: 4
  • 4 boneless lamb loin chops (4 ounces each)
  • 2 tablespoons reduced-fat butter, divided
  • 2 -3 tablespoons brown sugar (to taste)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 4 medium tart apples, thinly sliced
  • 2 tablespoons chopped pecans

Recipe

  • 1 in a large skillet over medium heat, cook lamb chops in 1 tablespoon butter for 4-5 minutes on each side or until a meat thermometer reads 160°. meanwhile, in a small bowl, combine the brown sugar, cinnamon, nutmeg and salt.
  • 2 remove chops and keep warm.
  • 3 add the apples, pecans, brown sugar mixture and remaining butter to the pan; cook and stir until apples are tender.
  • 4 serve with chops.
