Coleslaw Vinaigrette

Ingredients

  • Servings: 4
  • 2 cups shredded cabbage
  • 1/3 cup sliced green onion
  • 1/4 cup snipped parsley
  • 3 tablespoons vinegar
  • 2 tablespoons sugar
  • 2 tablespoons salad oil
  • 1 teaspoon salt
  • 2 hard-boiled eggs, chilled

Recipe

  • 1 combine cabbage, green onion and parsley in a large bowl.
  • 2 stir together vinegar, sugar, salad oil, and salt until sugar dissolves.
  • 3 pour dressing over vegetables.
  • 4 toss to coat.
  • 5 cover and chill.
  • 6 separate yolk from of 1 egg.
  • 7 cut up the and toss with the cabbage.
  • 8 slice remaining egg.
  • 9 arrange slices over the top of the salad.
  • 10 sieve yolk over the egg slices.
