Coleslaw Vinaigrette

Ingredients

- 2 cups shredded cabbage
- 1/3 cup sliced green onion
- 1/4 cup snipped parsley
- 3 tablespoons vinegar
- 2 tablespoons sugar
- 2 tablespoons salad oil
- 1 teaspoon salt
- 2 hard-boiled eggs, chilled
Recipe
- 1 combine cabbage, green onion and parsley in a large bowl.
- 2 stir together vinegar, sugar, salad oil, and salt until sugar dissolves.
- 3 pour dressing over vegetables.
- 4 toss to coat.
- 5 cover and chill.
- 6 separate yolk from of 1 egg.
- 7 cut up the and toss with the cabbage.
- 8 slice remaining egg.
- 9 arrange slices over the top of the salad.
- 10 sieve yolk over the egg slices.
