Basic Corn Sticks

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 1 cup buttermilk
  • 1 cup cornmeal, plus
  • 2 tablespoons cornmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 egg
  • 2 tablespoons vegetable oil
  • 1 tablespoon sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup unbleached flour

Recipe

  • 1 preheat oven and the ungreased corn stick iron pan to 450 degrees until pan is very hot.
  • 2 in a large mixing bowl, beat all ingredients together using a large wire whisk. *do not* overmix.
  • 3 grease the pan carefully and fill iron pan 2/3 full with the batter.
  • 4 bake until brown, approximately 12 minutes. once baked, allow to stand 5 minutes.
  • 5 serve with butter and honey!
  • 6 yield is estimated.
