Basic Corn Sticks

Ingredients
- 1 cup buttermilk
- 1 cup cornmeal, plus
- 2 tablespoons cornmeal
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 egg
- 2 tablespoons vegetable oil
- 1 tablespoon sugar
- 1/2 teaspoon baking powder
- 1/2 cup unbleached flour
Recipe
- 1 preheat oven and the ungreased corn stick iron pan to 450 degrees until pan is very hot.
- 2 in a large mixing bowl, beat all ingredients together using a large wire whisk. *do not* overmix.
- 3 grease the pan carefully and fill iron pan 2/3 full with the batter.
- 4 bake until brown, approximately 12 minutes. once baked, allow to stand 5 minutes.
- 5 serve with butter and honey!
