Curry Mayonnaise From The Soho Charcuterie

Ingredients

  • Servings: 4
  • 1/4 teaspoon cumin
  • 1/4 teaspoon minced garlic
  • 1/2 teaspoon grated fresh ginger
  • 1 extra-large egg yolk
  • 1 1/2 teaspoons red wine vinegar
  • 1/2 lemon, juice of
  • 1/2 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 2 teaspoons medium-hot curry powder
  • 2 tablespoons chutney
  • 2/3 cup soy oil

Recipe

  • 1 first, in a mortar, grind the cumin, garlic and ginger.
  • 2 combine this mixture and all the remaining ingredients, except the oil and chutney.
  • 3 stir in the chutney last.
  • 4 very good over [2 7-oz cans solid tuna, drained] tuna with 1/2 c chopped apple, 1/4 c scallions, 3 t chopped celery, 2 t currants and 1/3 c slivered almonds toasted in a 350 oven for 10-15 minutes.
