Curry Mayonnaise From The Soho Charcuterie

Ingredients

- 1/4 teaspoon cumin
- 1/4 teaspoon minced garlic
- 1/2 teaspoon grated fresh ginger
- 1 extra-large egg yolk
- 1 1/2 teaspoons red wine vinegar
- 1/2 lemon, juice of
- 1/2 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 2 teaspoons medium-hot curry powder
- 2 tablespoons chutney
- 2/3 cup soy oil
Recipe
- 1 first, in a mortar, grind the cumin, garlic and ginger.
- 2 combine this mixture and all the remaining ingredients, except the oil and chutney.
- 3 stir in the chutney last.
- 4 very good over [2 7-oz cans solid tuna, drained] tuna with 1/2 c chopped apple, 1/4 c scallions, 3 t chopped celery, 2 t currants and 1/3 c slivered almonds toasted in a 350 oven for 10-15 minutes.
