Creamed Corn With Bacon

Ingredients

- 6 ears fresh corn
- 4 slices bacon, cut into 1/2 inch pieces (4 oz)
- 1/2 cup finely chopped red bell pepper
- 3/4 cup milk
- 0.5 (8 ounce) container soft cream cheese with chives and onions
- chopped fresh parsley
Recipe
- 1 cut kernels from corn.
- 2 in a large skillet cook bacon until crisp. remove bacon from skillet. drain on paper towels. reserve 1 tablespoon bacon drippings in skillet.
- 3 add corn and red pepper.
- 4 stir in milk.
- 5 cook and stir for 6 to 8 minutes or until corn is tender.
- 6 stir cream cheese into mixture in skillet.
- 7 cook and stir 2 to 3 minutes or until cheese melts.
- 8 stir in bacon pieces. season with salt and pepper.
- 9 garnish with parsley, if desired.
