Chicken And Mushrooms

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 cups sliced mushrooms
  • 4 scallions, sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 lb boneless skinless chicken breast, but in 1/2 inch pieces
  • 1 1/2 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 cup chopped fresh cilantro

Recipe

  • 1 heat oil in a medium size skillet over medium heat.
  • 2 add garlic to pan and cook 1 minute.
  • 3 stir in mushrooms, scallions, 1/4 tsp salt and pepper.
  • 4 cook 3 minutes stirring often.
  • 5 reduce heat to medium.
  • 6 add chicken pieces to pan and sprinkle w/remaining salt and pepper.
  • 7 cook, stirring for 4 minutes or until cooked through.
  • 8 stir in soy sauce, vinegar and cilantro.
  • 9 cook 2 minutes.
  • 10 serve.
