Cheese And Broccoli Topped Chicken

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups broccoli, frozen
  • 4 chicken breasts, boneless, skinless, frozen
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup light mayonnaise
  • 1 tablespoon dijon mustard (or 1 tablespoon mustard and 1 tsp frank's chili and lime)
  • 1 green onion, finely chopped
  • 3/4 cup old cheddar cheese, light, shredded, divided
  • 2 tablespoons almonds, sliced

Recipe

  • 1 preheat oven to 375°f.
  • 2 blanch the broccoli in boiling salted water for 3 minutes - drain and rinse under cold running water and set aside.
  • 3 arrange chicken on a foil-lined baking sheet and season with salt and pepper.
  • 4 combine mayo, mustard and stir in the broccoli, green onion and 1/2 cup of the cheese.
  • 5 spread an equal portion of the mixture onto each breast.
  • 6 bake for 15 to 17 minutes.
  • 7 sprinkle with remaining cheese and all the almonds.
  • 8 broil for 1 or 2 mins, until nuts are browned and cheese is bubbly.
  • 9 serve with rice or sweet potato fries.
