Cheese And Broccoli Topped Chicken

Ingredients

- 2 cups broccoli, frozen
- 4 chicken breasts, boneless, skinless, frozen
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup light mayonnaise
- 1 tablespoon dijon mustard (or 1 tablespoon mustard and 1 tsp frank's chili and lime)
- 1 green onion, finely chopped
- 3/4 cup old cheddar cheese, light, shredded, divided
- 2 tablespoons almonds, sliced
Recipe
- 1 preheat oven to 375°f.
- 2 blanch the broccoli in boiling salted water for 3 minutes - drain and rinse under cold running water and set aside.
- 3 arrange chicken on a foil-lined baking sheet and season with salt and pepper.
- 4 combine mayo, mustard and stir in the broccoli, green onion and 1/2 cup of the cheese.
- 5 spread an equal portion of the mixture onto each breast.
- 6 bake for 15 to 17 minutes.
- 7 sprinkle with remaining cheese and all the almonds.
- 8 broil for 1 or 2 mins, until nuts are browned and cheese is bubbly.
- 9 serve with rice or sweet potato fries.
