Bran Muffins

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 2 cups all-bran cereal
  • 4 cups bran buds
  • 2 cups hot water
  • 3 cups sugar
  • 1 cup butter
  • 4 eggs
  • 1 quart buttermilk
  • 5 teaspoons baking soda
  • 4 cups flour

Recipe

  • 1 pour all bran and bran buds into a large bowl, cover with water and let soften for 10-15 minutes.
  • 2 preheat oven to 400'.
  • 3 in another bowl cream together sugar, butter, eggs, milk and soda.
  • 4 add creamed mixture to bran and add flour. mix very well.
  • 5 spoon batter into muffin tins filling completely.
  • 6 bake for 18-20 minutes for regular sized muffins.
  • 7 cool on wire rack.
