Boiled Date Cake

Ingredients

• 3/4 cup butter
• 1 cup milk
• 1/2 cup brown sugar, firmly packed
• 1 cup chopped dates
• 1/2 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1/2 teaspoon bicarbonate of soda
• 2 eggs, lightly beaten
• 2 1/4 cups self-raising flour, sifted

Recipe

• 1 combine butter, milk, sugar, dates and spices in a pan, stir over heat until butter is melted, bring to boil, remove from heat, stir in soda, stand 5 minutes.
• 2 stir in lightly beaten eggs and sifted flour in two lots, mix well.
• 3 pour mixture (it will be quite thick) into a well greased 20cm ring tin, bake in a moderate oven for 40 minutes.
• 4 turn a wire rack to cool.
• 5 serve buttered.
