Broad Bean And Rocket Salad With Bean Butter

Ingredients

  • Servings: 8
  • 2 (400 g) butter beans (drained and rinsed)
  • 4 teaspoons creamed horseradish
  • 5 tablespoons olive oil
  • 1 lime (zest and juice)
  • 175 g broad beans (fresh or frozen cooked and peeled)
  • 2 tablespoons walnut oil
  • 70 g rocket
  • lemon wedge

Recipe

  • 1 whizz butter beans with horseradish olive oil lime zest and juice and 3 tablespoons warm water until smooth and creamy.
  • 2 toss broad beans in walnut oil, add rocket and toss again.
  • 3 pile the butter bean mix into a shallow serving dish and put the bean and rockets salad in large bowl, season well with black pepper and serve with lemon wedges and bread sticks.
