Bombay Black-eyed Peas

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 2 (1 lb) cans black-eyed peas
  • 2 tablespoons peanut oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 bunch scallion, chopped
  • 1 tablespoon gingerroot, freshly grated
  • 1/2 green pepper, chopped
  • 1 tablespoon molasses
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground coriander
  • 3 tablespoons soy sauce
  • 2/3 cup tomato sauce
  • 1/2 teaspoon ground pepper, fresh
  • 1/2 teaspoon chili powder

Recipe

  • 1 mix ingredients for sauce and set aside.
  • 2 heat oil in heavy frying pan.
  • 3 when hot, put in onions and saute until golden brown.
  • 4 add garlic and cook for few seconds.
  • 5 add scallions and saute for 3 minutes.
  • 6 add ginger and green pepper, and cook for additional 3 minutes.
  • 7 add sauce, mix well, and simmer for 5 minutes.
  • 8 add peas, mix well in sauce.
  • 9 cover and simmer on medium-low heat for 20 minutes, stirring occasionally.
  • 10 serve and enjoy.
