Ingredients
- 2 cups sugar
- 6 tablespoons unsweetened cocoa powder
- 1/2 cup evaporated low-fat milk
- 1/3 cup margarine (try to use non-hydrogenated)
- 1/2 teaspoon vanilla
- 3 cups quick-cooking rolled oats
- 1 cup shredded sweetened coconut
Recipe
- 1 in a medium saucepan, combine sugar, cocoa, milk and margarine.
- 2 cook and stir over medium-high heat until mixture comes to a boil.
- 3 boil for 1 minute, stirring constantly.
- 4 remove from heat, stir in vanilla.
- 5 add rolled oats and coconut, mix well.
- 6 drop by tablepoonfuls cookie sheet (lined with wax paper) and refrigerate until firm, about 30 minutes to 1 hour.
- 7 store in airtight container (fridge or room temp).
