Bombay Green Beans And Tomatoes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 (10 ounce) package frozen green beans, french style green beans
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 1 teaspoon vegetable oil
  • 1/2 cup onion, finely chopped
  • 1 large garlic clove, finely minced
  • 1 teaspoon ground cumin
  • 1 (1 lb) can tomato, chopped and drained (save liquid)
  • salt and pepper

Recipe

  • 1 cook green beans according to package directions. drain.
  • 2 dissolve cornstarch in water in a small bowl. set aside.
  • 3 heat oil in a large nonstick skillet over medium heat. add onion and garlic.
  • 4 cook, stirring frequently, 3 minutes or until onion is tender.
  • 5 sprinkle with cumin. cook and stir, 1 minute. reduce heat to medium-low.
  • 6 stir cornstarch mixture and add to skillet along with reserved tomato liquid. cook and stir, until mixture is thick and bubbly. then add tomatoes and green beans.
  • 7 continue to cook and stir until mixture is heated through.
  • 8 add salt and pepper to taste.
