Ingredients

- 2 eggs
- 2 cups skim milk
- 1/2 cup splenda sugar substitute
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 2 cups bread cubes
- 1/4 cup raisins
- 1/4 cup dried apricot
Recipe
- 1 whisk together eggs, milk, splenda, cinnamon, vanilla and salt. stir in bread cubes, raisins and apricots.
- 2 pour into a greased 8x2-inch round baking dish. place in a 13x9-inch pan and place on oven rack. pour hot water into larger pan until 1-inch depth.
- 3 bake at 350f for 45-50 minutes or until knife inserted halfway between edge and center comes out clean.
- 4 serve warm or chilled,.
