Bread Pudding

Ingredients

  • Servings: 6
  • 2 eggs
  • 2 cups skim milk
  • 1/2 cup splenda sugar substitute
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2 cups bread cubes
  • 1/4 cup raisins
  • 1/4 cup dried apricot

Recipe

  • 1 whisk together eggs, milk, splenda, cinnamon, vanilla and salt. stir in bread cubes, raisins and apricots.
  • 2 pour into a greased 8x2-inch round baking dish. place in a 13x9-inch pan and place on oven rack. pour hot water into larger pan until 1-inch depth.
  • 3 bake at 350f for 45-50 minutes or until knife inserted halfway between edge and center comes out clean.
  • 4 serve warm or chilled,.
