Brandy Peppercorn Sauce For Beef

Ingredients

- 1 tablespoon peppercorn
- 1 tablespoon red onion
- 2 tablespoons butter
- 1 cup brandy
- 4 tablespoons demi-glace
- 2 tablespoons heavy cream
- salt and pepper
Recipe
- 1 in a small sautee pan add onions, peppercorns and butter. sautee until somewhat soft.
- 2 add 1/2 cup of brandy and reduce until its almost gone. it will catch fire!
- 3 add the rest of the brandy, demi-glace, cream, and reduce until thick enough to pour over steak, salt to taste.
- 4 best with filet!
