Broccoli Cornbread

Ingredients

  • Servings: 4
  • 1/2 cup butter or 1/2 cup oleo, melted
  • 1/3 cup onion, chopped
  • 1 teaspoon salt
  • 3/4 cup cottage cheese
  • 1 (10 ounce) package frozen chopped broccoli
  • 4 eggs, slightly beaten
  • 1 (8 1/2 ounce) package jiffy corn muffin mix

Recipe

  • 1 thaw and drain broccoli.
  • 2 combine first six ingredients.
  • 3 stir (don't beat) muffin mix into first mixture.
  • 4 pour into a greased 13" x 9" x 2" baking pan.
  • 5 bake at 400 deg f for 20-25 minutes , or until done.
  • 6 cut into serving size squares.
